Title: Warm Plum Cake [#2]
Categories: Aussie Dessert Fruit
Yield: 6 Servings

825gPlums, tinned, or freshly stewed.
60gButter
1/2cSugar
1/2cFlour, self-raising, sifted.
1/2tsVanilla essance
1 Lemon, rind of... grated, -OR-
1/2tsDried orange peel, ground.
2 Eggs, 60g
2tbMilk
3tsCornflour, optional.

Butter the base and sides of a cake tin 20cm in size and line the base with some non-stick baking paper so the cake will be easy to turn out, or use a spring form pan.

Preheat the oven to 180^C. Drain the plums over a sieve while preparing the cake. Carefully remove the stones.

Cut the butter into a few pieces and leave to melt in a saucepan. Place aside to cool. Put the sugar and self-raising flour into a bowl. Add vanilla essence, lemon rind, eggs and milk to butter and pour over the dry ingredients in the bowl. Beat with a wooden spoon for 30 seconds.

Arrange the plums in the base of the prepared tin. Take spoonfuls of the cake mixture and dot them between and over the plums, disturbing them as little as possible. Don't fuss if the mixture doesn't look even, it will spread out as it warms.

Bake in the oven for about 30 minutes or until set to touch in the centre. Leave to cool in the pan for 10 minutes before inverting onto a plate. The plums will be lightly mounded in the cake. You can warm the plum syrup from the can/preserves if you wish to serve this in s jug with the cake, thickening it with about 3 teaspoons cornflour.

The plums peep through to give an interesting red colour under this buttery cake topping. A dessert cake which can be eaten with a little ice-cream or some whipped cream, it reheats well in the microwave, if you have any leftover.

**MADE-Jan 1998-used about 500gm green plums from TKLATR and stewed them with a teaspoon of aspartame/EQUAL. Turned out rather tart, but the cake turned out magnificent, especially when serves with some sweetened juice and a dollop of thickened cream. An old-fashioned and homely dish. Recommended! 9/10

Other canned fruits may be substituted for the plums.
